Introduction
Khandvi is a light, savory snack made from gram flour and yogurt. Rolled into delicate spirals, it’s tempered with mustard seeds and curry leaves, and known for its melt-in-the-mouth texture.
- Making the Batter Ingredients:
- 1 cup besan (gram flour)
- 1 cup curd
- 2 cups water
- ¼ tsp turmeric
- Salt to taste
Instructions:
- Mix all into a lump-free batter. Cook on low heat, stirring continuously until thick.
- Spreading and Rolling
- Spread batter thinly on a greased plate or foil.
- Let cool slightly, then cut into strips and roll.
- Tempering Ingredients:
- 1 tbsp oil
- 1 tsp mustard seeds
- Curry leaves, green chilies
- Grated coconut & coriander for garnish
Instructions:
- Temper oil with mustard, curry leaves, chilies. Pour over rolls.
