A mildly spiced pumpkin curry Origin: Bengal

Introduction
A mildly spiced pumpkin curry with potatoes, black chickpeas, and panch phoron.

Ingredients

  • 2 cups pumpkin (cubed)

  • 1 potato (cubed)

  • ½ cup black chickpeas (soaked)

  • 1 tsp panch phoron

  • 1 dried red chili

  • 2 tbsp mustard oil

Instructions
Cook chickpeas till soft.
Fry panch phoron, add vegetables, cook till tender.
