Preparing the Main Ingredients

Ingredients:

  • 2 medium raw mangoes, washed and cut into bite-sized pieces
  • 2 tbsp mustard seeds (coarsely ground)
  • 1 tbsp fennel seeds
  • 1 tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tbsp red chilli powder
  • 1 tbsp salt (or to taste)
  • ½ cup mustard oil

Instructions:

  1. Wash and dry the raw mangoes thoroughly before cutting them into bite-sized pieces.
  2. Lightly roast the fennel and fenugreek seeds, then coarsely grind them.
  3. Mix the mango pieces with the mustard seeds, fennel, fenugreek, turmeric powder, red chilli powder, and salt.
  4. Heat the mustard oil until it reaches the smoking point, then allow it to cool completely.
  5. Pour the cooled mustard oil over the mango mixture and stir well until all the pieces are evenly coated.
  6. Transfer the pickle to a clean, dry glass jar and keep it in sunlight for 4 to 5 days, gently shaking the jar once each day before serving.

Ensure both the raw mangoes and the storage jar are completely dry before
preparing the pickle, as even a small amount of moisture can reduce its
shelf life. Always use a clean, dry spoon when serving to keep the pickle
fresh for longer.

Serving Suggestions

Serve with parathas, dal and rice, stuffed parathas, or traditional Indian
thalis to add a burst of tangy, spicy flavor. It also pairs wonderfully
with curd rice and simple home-cooked meals.
