Prepared during the winter harvest, Gobhi-Shalgam Achaar has been a
cherished part of North Indian cuisine for generations. It celebrates the
abundance of seasonal vegetables while preserving them using time-honoured
pickling techniques, making it a staple in many family kitchens throughout

Preparing the Main Ingredients

Ingredients:

  • 2 cups cauliflower florets
  • 2 medium turnips, peeled and cut into cubes
  • 2 tbsp mustard seeds (coarsely ground)
  • 1 tsp fennel seeds
  • ½ tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp salt (or to taste)
  • 2 tbsp jaggery
  • 2 tbsp vinegar
  • ¼ cup mustard oil

Instructions:

  1. Wash the cauliflower and turnips, then cut them into bite-sized pieces.
  2. Blanch the vegetables in boiling water for 2–3 minutes, then drain and dry them thoroughly.
  3. Lightly roast the fennel and fenugreek seeds, then coarsely grind them.
  4. Mix the vegetables with the mustard seeds, fennel, fenugreek, turmeric powder, red chilli powder, and salt.
  5. Heat the mustard oil until it reaches the smoking point, then allow it to cool slightly. Add the jaggery and vinegar, stirring until the jaggery dissolves completely.
  6. Pour the prepared mixture over the vegetables, mix well, and transfer the achaar to a clean, dry glass jar. Allow it to mature for 2–3 days before serving.

Dry the vegetables completely after blanching to remove excess moisture, as
this helps keep the achaar fresh and flavourful for longer. Always store it
in a clean, dry glass jar and use a dry spoon when serving.

Serving Suggestions

Serve with parathas, stuffed flatbreads, puris, dal and rice, or traditional
North Indian meals for a delicious sweet-and-tangy accompaniment. It also
pairs wonderfully with simple home-cooked lunches and festive thalis.
