Preparing the Main Ingredients

Ingredients:

  • 250 g fresh green chillies
  • 2 tbsp mustard seeds (coarsely ground)
  • 1 tsp fennel seeds
  • ½ tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tsp salt (or to taste)
  • 2 tbsp lemon juice or vinegar
  • ¼ cup mustard oil

Instructions:

  1. Wash the green chillies thoroughly and dry them completely using a clean kitchen towel.
  2. Slit each chilli lengthwise without cutting it into two separate pieces.
  3. Lightly roast the fennel and fenugreek seeds, then coarsely grind them.
  4. Combine the mustard seeds, fennel, fenugreek, turmeric powder, and salt with the lemon juice or vinegar to prepare the spice mixture.
  5. Stuff or coat the green chillies evenly with the prepared spice mixture.
  6. Heat the mustard oil until it reaches the smoking point, then allow it to cool completely. Pour the oil over the chillies, transfer the achaar to a clean, dry glass jar, and let it mature for 3–4 days before serving.
