Introduction

A flavourful North Indian pickle made with fresh garlic cloves, aromatic
spices, and mustard oil. Known for its bold, tangy, and spicy taste,
Lehsun Ka Achaar is a popular accompaniment that adds depth and zest to
everyday meals.

Historical Relevance

Lehsun Ka Achaar has been prepared in North Indian households for
generations as a traditional way of preserving fresh garlic. Valued for its
distinctive flavour and culinary versatility, this pickle remains a staple
in many regional cuisines and is often enjoyed alongside simple home-cooked
meals.

Preparing the Main Ingredients

Ingredients:

  • 250 g garlic cloves, peeled
  • 2 tbsp mustard seeds (coarsely ground)
  • 1 tsp fennel seeds
  • ½ tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1½ tsp salt (or to taste)
  • 2 tbsp lemon juice or vinegar
  • ¼ cup mustard oil

Instructions:

  1. Peel the garlic cloves and pat them completely dry using a clean kitchen towel.
  2. Lightly roast the fennel and fenugreek seeds, then coarsely grind them.
  3. Mix the garlic cloves with the mustard seeds, fennel, fenugreek, turmeric powder, red chilli powder, salt, and lemon juice or vinegar.
  4. Heat the mustard oil until it reaches the smoking point, then allow it to cool completely.
  5. Pour the cooled mustard oil over the garlic mixture and stir well until all the cloves are evenly coated.
  6. Transfer the achaar to a clean, dry glass jar and allow it to mature for 4–5 days, stirring gently once each day before serving.

Pro Tips

Ensure the garlic cloves are completely dry before mixing them with the
spices, as excess moisture can reduce the shelf life of the achaar. Store
it in a clean, dry glass jar and always use a dry spoon to maintain its
freshness and flavour.

Serving Suggestions

Pair with curd rice, khichdi, simple vegetable curries, dal and rice, or
homemade Indian breads such as parathas and rotis for a delicious, zesty
accompaniment that enhances every bite.

Fun Fact

Lehsun Ka Achaar develops a richer, mellower flavour as it matures,
allowing the garlic to absorb the aromatic spices and mustard oil, making
the pickle even more delicious after a few days of pickling.
