Litti Chokha
A Rustic Bihari Delight

Introduction
Litti Chokha is the quintessential dish from Bihar, combining wheat flour balls stuffed with spiced sattu (roasted gram flour) served with mashed vegetables like brinjal, potato, and tomato. Smoky, earthy, and satisfying, it’s a beloved staple across the state.
Ingredients:
For Litti:
- 2 cups wheat flour
- 1 cup sattu (roasted gram flour)
- 1 tbsp mustard oil
- 1 tsp ajwain (carom seeds)
- 1 tsp nigella seeds
- Salt to taste
- Warm water for kneading
For Chokha:
- 2 medium potatoes, boiled
- 1 large brinjal, roasted
- 1 tomato, roasted
- 1 green chili, chopped
- 1 tsp mustard oil
- Salt to taste
- Fresh coriander, chopped
- Instructions:
- Knead the wheat flour with salt and water to make a firm dough.
- Mix sattu with mustard oil, ajwain, nigella seeds, and salt.
- Stuff into dough balls and seal.
- Bake over coal or in an oven until browned.
- Mash roasted vegetables with mustard oil, green chili, and salt to make chokha.
- Pro Tip:
Roasting the litti over charcoal enhances the smoky aroma.
- Serving Suggestions:
Drizzle hot littis with ghee and serve with chokha.
