Toasted Coconut Curry with Shallots or Veggies Origin: Kerala

Introduction

Theeyal means “burnt dish” and refers to the roasted coconut that gives it a dark, rich flavor. This dish from Central Kerala often includes shallots, okra, or even prawns.

Ingredients

  • 1 cup grated coconut
  • 8–10 shallots or vegetables
  • Tamarind, mustard, curry leaves
  • Red chili, coriander, and fenugreek seeds

Instructions

  • Dry roast coconut until dark brown. Grind with spices.
  • Sauté shallots in oil, add tamarind water.
  • Add coconut paste and simmer.
  • Temper mustard seeds, curry leaves in coconut oil and pour over.

Serving Suggestion
 Served with steamed rice and a side of thoran or papadam.
