Avarekalu Saaru

Seasonal curry Origin: Karnataka

Introduction
Seasonal curry made with tender avarekalu beans in a coconut-based gravy, enjoyed during Sankranti.

Ingredients

  •  2 cups avarekalu beans
  •  1 cup grated coconut
  •  2 tsp coriander seeds
  •  2 tsp tamarind pulp
  •  Dry red chilies, curry leaves, salt

Instructions

  1. Cook beans till soft.
  2.  Roast coconut, chilies, and coriander, grind to paste.
  3.  Add to beans with tamarind and simmer.

Pro Tips
Fresh avarekalu (winter harvest) gives the best taste.

Serving Suggestions
Best eaten with ragi mudde or hot rice.
