Steamed Rice Dumplings with Jaggery Syrup Origin: West Bengal

Introduction

A cousin of Patishapta, Puli Pithe are steamed/boiled rice-flour dumplings filled with coconut and jaggery, then simmered in thickened milk or jaggery syrup.

Historical Relevance

Part of the “Pithe-Puli” family, these are made in winter when fresh date palm jaggery is harvested. Symbol of community bonding, families gather to shape pulis together.

  1. Preparing the Dough

Ingredients:

1 cup rice flour

1 cup water

Pinch of salt

Instructions:

Boil water with salt.

Add rice flour, stir into dough.

Knead while warm.

Ingredients:

Grated coconut

Nolen gur

Instructions:

Cook coconut with jaggery till sticky.

Cool and stuff into rice dough balls.

Steam or boil pulis in milk/jaggery syrup until soft.
