Introduction

Pitthi Paratha is a rustic stuffed flatbread made with roasted urad dal paste, seasoned with garlic, ajwain, and spices. It is a hearty winter dish, popular in Mithila region of Bihar during harvest festivals and family celebrations.

Historical Relevance

In Maithili households, pitthi (spiced lentil stuffing) is considered a symbol of prosperity and is served at weddings and winter gatherings.

1. Preparing the Pitthi (Stuffing)

Ingredients:

  • 1 cup urad dal (split black gram)
  • 1 tsp ajwain (carom seeds)
  • 2 garlic cloves (crushed)
  • 1 tsp cumin seeds
  • 1 tsp salt
  • 1 tsp mustard oil

Instructions:

  • Dry roast urad dal and grind coarsely.
  • Mix with spices, garlic, and mustard oil to form stuffing.

2. Making the Paratha

Ingredients:

  • 2 cups whole wheat flour
  • ½ tsp salt
  • Water as needed

Instructions:

  • Make dough from flour, salt, and water.
  • Roll out a disc, fill with pitthi, seal and roll again.
  • Roast on tawa with ghee till golden brown.

  • Use warm water for softer dough.
  • Don’t overstuff or paratha may break.

Best enjoyed with pickle, curd, or jaggery in winter mornings.

In Bihar weddings, Pitthi Paratha is still offered as a “shuddh bhojan” (pure meal).
