Khatta Dalma is a zesty twist on Odisha’s sacred Dalma. It includes a hint of tamarind or dried mango, making it tangier and livelier than the temple variant.
- Cooking the Dalma Base
Ingredients:
- ½ cup toor dal
- Mixed vegetables (pumpkin, raw banana, papaya)
- ½ tsp turmeric
- Salt to taste
Instructions:
- Pressure cook dal with veggies, salt, turmeric.

Ingredients:
- 1 tbsp ghee
- ½ tsp panch phoron
- 2 dried red chilies
- 1 tbsp tamarind pulp or dried mango (ambula)
