Introduction

Khatta Dalma is a zesty twist on Odisha’s sacred Dalma. It includes a hint of tamarind or dried mango, making it tangier and livelier than the temple variant.

  1. Cooking the Dalma Base
    Ingredients:
  • ½ cup toor dal
  • Mixed vegetables (pumpkin, raw banana, papaya)
  • ½ tsp turmeric
  • Salt to taste

Instructions:

  • Pressure cook dal with veggies, salt, turmeric.

    Ingredients:
  • 1 tbsp ghee
  • ½ tsp panch phoron
  • 2 dried red chilies
  • 1 tbsp tamarind pulp or dried mango (ambula)
