Dubki Kadhi

Introduction
Dubki Kadhi is a soulful dish where small pakoras (dumplings) are dipped in a tangy besan-based gravy—comfort food at its best in central India.
- Prepare the Kadhi
Ingredients:
- 1 cup curd
- 2 tbsp besan
- ½ tsp turmeric, chili powder
- 2 cups water
- Salt, mustard seeds, curry leaves
Instructions:
- Whisk curd, besan, spices, and water.
- Boil while stirring continuously. Add tempering.
- Make the Pakoras (Dubkis)
Ingredients:
- ½ cup besan
- Onion, chili, coriander
- Salt and ajwain
Instructions:
- Make thick batter, deep-fry small pakoras.
- Drop into simmering kadhi. Cook for 5 mins.

- Use slightly sour curd for best results.
- Fry pakoras small to keep them tender.
Serving Suggestions
Pair with hot rice or jeera rice and fried papad.
