Sweet & Tangy Spread Origin: West Bengal

Introduction
Called “Tarbujer Chaatni,” this sweet, spiced watermelon chutney is a Bengali-style accompaniment to summer meals and especially relished after a spicy main course.

Ingredients
2 cups ripe watermelon (mashed or finely chopped)
2 tbsp sugar
1 tsp grated ginger
½ tsp roasted panch phoron powder
Salt, lemon juice

Instructions
Cook watermelon, sugar, and ginger till thickened.
Add lemon juice and panch phoron. Cool and serve.

Use slightly overripe watermelon for deeper flavor.

Goes well with luchi, puri, or as a cooling side.
