Introduction

Komolar Kheer is a delicately flavoured Assamese dessert using milk and orange pulp, served during Bihu and temple offerings in winter.

  1. Preparing the Kheer
    Ingredients:
  • ½ liter full-fat milk
  • 2 tbsp sugar
  • Orange segments (from 2 oranges), deseeded

Instructions:

  • Boil and reduce milk till thick. Add sugar.
  • Cool completely before gently folding in orange segments.

  • Never add citrus to hot milk – it will curdle.
  • Use sweet, seedless oranges.
