Sweet Coconut Milk Drink

Introduction
Aadi Paal is a traditional sweet drink made during the Tamil month of Aadi. It’s made with jaggery and coconut milk and offered as a prasadam.
Ingredients:
- 1 cup thick coconut milk
- ½ cup thin coconut milk
- ¼ cup grated jaggery
- A pinch of cardamom
- 1 tsp rice flour (optional)
Instructions:
- Dissolve jaggery in thin coconut milk and strain.
- Simmer with cardamom until slightly thick.
- Add thick coconut milk, cook on low for 2 minutes.
- Optional: Add a slurry of rice flour for thickness.
