Flaky Glazed Sweet Origin: Rajasthan

Introduction

Balushahi is a flaky, deep-fried doughnut-shaped sweet soaked in sugar syrup. It’s Rajasthan’s answer to glazed pastries—with a crunchy outside and soft inside.

Ingredients:

  • 1 cup maida (refined flour)

  • ¼ cup ghee

  • ½ tsp baking soda

  • ¼ cup curd

  • Sugar syrup (1 string consistency)

  • Oil/ghee for frying

Instructions:

  1. Mix maida, ghee, baking soda, curd to make a stiff dough.

  2. Rest dough for 30 mins, shape into small rounds with a dent in center.

  3. Fry on low heat till golden.

  4. Dip in warm sugar syrup for 3–4 minutes.

  • Fry on low heat for layered texture.

  • Don’t knead dough too much.
