Balushahi
Flaky Glazed Sweet
Origin: Rajasthan
Introduction
Balushahi is a flaky, deep-fried doughnut-shaped sweet soaked in sugar syrup. It’s Rajasthan’s answer to glazed pastries—with a crunchy outside and soft inside.
Ingredients:
- 1 cup maida (refined flour)
- ¼ cup ghee
- ½ tsp baking soda
- ¼ cup curd
- Sugar syrup (1 string consistency)
- Oil/ghee for frying
Instructions:
- Mix maida, ghee, baking soda, curd to make a stiff dough.
- Rest dough for 30 mins, shape into small rounds with a dent in center.
- Fry on low heat till golden.
- Dip in warm sugar syrup for 3–4 minutes.

- Fry on low heat for layered texture.
- Don’t knead dough too much.
