Gutti Vankaya Kura

A signature Andhra dish Origin: Andhra Pradesh

Introduction
A signature Andhra dish where tender brinjals are stuffed with a spicy, nutty masala and simmered in tamarind gravy.

Ingredients

  •  8–10 baby brinjals
  •  3 tbsp peanuts
  •  2 tbsp sesame seeds
  •  2 tbsp dry coconut
  •  2–3 dried red chilies
  •  1 lemon-sized tamarind (soaked)
  •  Spices: coriander, cumin, turmeric, salt

Instructions

  1. Roast peanuts, sesame, coconut, and red chilies. Grind into a thick masala paste.
  2. Slit brinjals and stuff with paste.
  3.  Heat oil, add stuffed brinjals, and sauté
  4.  Add tamarind pulp, remaining masala, and simmer until brinjals are soft.

Choose tender brinjals for best taste.
Cook on low flame to let brinjals absorb flavors.
