Spinach and Fenugreek Curry Origin: Uttarakhand

Introduction

Kafuli is a thick green curry made from spinach and fenugreek leaves, cooked with spices and rice flour. It’s rich in iron and a beloved winter dish.

Ingredients:
 1 bunch spinach + methi leaves
1 tbsp rice flour
½ tsp cumin seeds, salt
Garlic, green chili, mustard oil

Instructions:
 Blanch and puree the greens.
Sauté cumin, garlic, chili in mustard oil.
Add puree and rice flour paste.
Simmer till thick and well-cooked.

Pro Tips
 Add a pinch of hing for depth.
Don’t overcook greens to retain color.

 Enjoy with hot rice or mandua roti.
