Traditional Kerala pancakes

Introduction
Traditional Kerala pancakes fermented with toddy, soft and slightly sweet, part of Christian festive meals.
Ingredients
- 2 cups raw rice
- ½ cup grated coconut
- ½ cup toddy (or yeast solution)
- Sugar & salt
Instructions
- Soak rice, grind with coconut into a smooth batter.
- Mix toddy/yeast, sugar, and salt. Leave overnight to ferment.
- Pour ladleful on a hot pan, cover and cook till fluffy.

- Toddy fermentation gives a distinct flavor.
- Keep the batter slightly thick.
