Traditional Kerala pancakes Origin: Kerala

Introduction
Traditional Kerala pancakes fermented with toddy, soft and slightly sweet, part of Christian festive meals.

Ingredients

  • 2 cups raw rice

  • ½ cup grated coconut

  • ½ cup toddy (or yeast solution)

  • Sugar & salt

Instructions

  1. Soak rice, grind with coconut into a smooth batter.

  2. Mix toddy/yeast, sugar, and salt. Leave overnight to ferment.

  3. Pour ladleful on a hot pan, cover and cook till fluffy.

  • Toddy fermentation gives a distinct flavor.

  • Keep the batter slightly thick.
