Broken Wheat Jaggery Dessert
Origin: Gujarat
Introduction
Kansar is a wholesome and traditional Gujarati sweet made from cracked wheat (dalia) and jaggery, often prepared to celebrate auspicious beginnings like weddings.
Ingredients:
- 1 cup broken wheat (dalia)
- ¾ cup grated jaggery
- 2 tbsp ghee
- 2 cups water
- Cardamom and nut garnish (optional)
Instructions:
- Dry roast dalia until aromatic.
- Boil water, add dalia and cook till soft.
- Add jaggery and mix until melted.
- Stir in ghee and cardamom.
Pro Tips:
- Don’t overcook after adding jaggery.
- Ghee enhances flavor—don’t skip!
Serving Suggestions:
- Serve warm, garnished with almonds or coconut.
