Broken Wheat Jaggery Dessert Origin: Gujarat

Introduction
Kansar is a wholesome and traditional Gujarati sweet made from cracked wheat (dalia) and jaggery, often prepared to celebrate auspicious beginnings like weddings.

Ingredients:

  • 1 cup broken wheat (dalia) 
  • ¾ cup grated jaggery 
  • 2 tbsp ghee 
  • 2 cups water 
  • Cardamom and nut garnish (optional)

Instructions:

  1. Dry roast dalia until aromatic. 
  2. Boil water, add dalia and cook till soft. 
  3. Add jaggery and mix until melted. 
  4. Stir in ghee and cardamom.

Pro Tips:

  • Don’t overcook after adding jaggery. 
  • Ghee enhances flavor—don’t skip!

Serving Suggestions:

  • Serve warm, garnished with almonds or coconut.

Fun Fact:
Kansar is considered sacred and is one of the few sweets men are traditionally encouraged to prepare during weddings.
