Introduction
A Udupi-style halwa made from ash gourd (white pumpkin), ghee, and sugar. Delicate, aromatic, and lesser known outside Karnataka.
Ingredients
2 cups grated ash gourd
1 cup sugar
½ cup ghee
Cardamom powder, saffron, cashews
Instructions
Sauté grated ash gourd till water evaporates.
Add sugar, cook till it thickens.
Stir in ghee gradually, finish with cardamom and saffron.

Squeeze out extra water from the ash gourd before cooking for quicker prep.
