Introduction

Mysore Pak is a ghee-rich sweet made from besan, sugar, and clarified butter. With its melt-in-the-mouth texture, it is a festive staple across Karnataka.

Historical Relevance

This royal sweet originated in the Mysore Palace kitchen in the 19th century, created for King Krishna Raja Wadiyar. Its royal origins gave it the name “Pak” (sweet concoction).

  1. Preparing the Syrup

Ingredients:

  • 1 cup sugar

  • ½ cup water

Instructions:

  1. Boil sugar with water till one-string consistency.

  1. Adding Flour & Ghee

Ingredients:

  • 1 cup besan (gram flour)

  • 1 cup ghee

Instructions:

  1. Roast besan lightly in ghee.

  2. Pour sugar syrup into besan mixture.

  3. Stir continuously until mixture leaves sides.

  4. Pour onto greased plate, cut into squares.

  • Cook on medium flame to avoid lumps.
