Spiced Green Peas Curry Origin: Uttar Pradesh

Introduction

Nimona is a winter favorite in eastern Uttar Pradesh, made using crushed fresh green peas and whole spices. It’s rustic and full of earthy flavor.

Ingredients:

  • 1½ cups fresh green peas (coarsely crushed)

  • 1 potato, diced

  • 1 onion, 1 tomato

  • 1 tsp ginger-garlic paste

  • Spices: cumin, bay leaf, garam masala

  • Salt, mustard oil

Instructions:

  1. Heat oil, sauté cumin, bay leaf, onions, ginger-garlic.

  2. Add tomato and dry spices. Cook well.

  3. Add potatoes, crushed peas, little water.

  4. Cover and simmer till soft and flavorful.

Pro Tips:

  • Use fresh peas, not frozen, for taste.

  • Mustard oil gives it an authentic punch.

Serving Suggestions:

  • Serve with paratha or plain rice.
