Nimona
Spiced Green Peas Curry
Origin: Uttar Pradesh
Introduction
Nimona is a winter favorite in eastern Uttar Pradesh, made using crushed fresh green peas and whole spices. It’s rustic and full of earthy flavor.
Ingredients:
- 1½ cups fresh green peas (coarsely crushed)
- 1 potato, diced
- 1 onion, 1 tomato
- 1 tsp ginger-garlic paste
- Spices: cumin, bay leaf, garam masala
- Salt, mustard oil
Instructions:
- Heat oil, sauté cumin, bay leaf, onions, ginger-garlic.
- Add tomato and dry spices. Cook well.
- Add potatoes, crushed peas, little water.
- Cover and simmer till soft and flavorful.
Pro Tips:
- Use fresh peas, not frozen, for taste.
- Mustard oil gives it an authentic punch.

- Serve with paratha or plain rice.
