Introduction
Putkal Bhaji is a simple stir-fry made using tender bamboo shoots—a delicacy in Jharkhand’s tribal regions. The earthy flavors are elevated with mustard oil and garlic.
- Preparing the Bamboo Shoots
Ingredients:
- 1 cup young bamboo shoots (putkal, chopped)
- Water (for boiling)
- Salt (to taste)
Instructions:
- Boil bamboo shoots in water with a pinch of salt for 10 mins.
- Drain and set aside.
- Stir-Frying the Bhaji
Ingredients:
- 1 tsp mustard seeds
- 3 garlic cloves (crushed)
- 1 green chili (slit)

- Add green chili and sauté briefly.
