Introduction
A nutritious spin on classic biryani, this South Delhi favorite replaces rice with protein-rich quinoa, while retaining rich Indian spices.

Ingredients

  • 1 cup quinoa (rinsed)
  • 1 cup mixed vegetables (carrot, beans, peas)
  • 1 onion (sliced)
  • 1 tsp ginger-garlic paste
  • ½ tsp garam masala
  • ½ tsp turmeric
  • ½ tsp chili powder
  • 1 bay leaf, 1 cinnamon stick
  • 2 tbsp curd
  • Salt to taste
  • Fresh coriander and mint (for garnish)

Instructions

  • Cook quinoa separately.
  • In oil, sauté spices, onions, and ginger-garlic paste.
  • Add vegetables and spices. Cook until tender.
  • Stir in curd and quinoa. Mix and simmer for 2–3 minutes.

Pro Tips

  • Add roasted cashews for crunch.
  • Serve with mint raita.
