Quinoa Biryani

Introduction
A nutritious spin on classic biryani, this South Delhi favorite replaces rice with protein-rich quinoa, while retaining rich Indian spices.
Ingredients
- 1 cup quinoa (rinsed)
- 1 cup mixed vegetables (carrot, beans, peas)
- 1 onion (sliced)
- 1 tsp ginger-garlic paste
- ½ tsp garam masala
- ½ tsp turmeric
- ½ tsp chili powder
- 1 bay leaf, 1 cinnamon stick
- 2 tbsp curd
- Salt to taste
- Fresh coriander and mint (for garnish)
Instructions
- Cook quinoa separately.
- In oil, sauté spices, onions, and ginger-garlic paste.
- Add vegetables and spices. Cook until tender.
- Stir in curd and quinoa. Mix and simmer for 2–3 minutes.
Pro Tips
- Add roasted cashews for crunch.
- Serve with mint raita.
