A traditional side dish using sanai ka phool (sesbania flowers), this simple mash is full of rustic charm. Lightly boiled and mashed with mustard oil and garlic, it’s a flavorful village specialty.
Ingredients:
● 1 cup sanai flowers (cleaned)
● Salt to taste
● Water (for boiling)
Instructions:
● Boil flowers in salted water until soft.
● Drain and let cool slightly.

● 2 garlic cloves (crushed)
● 1 green chili (chopped)
● 1 tsp mustard oil
Instructions:
● Mash boiled flowers with garlic, chili, and mustard oil.
● Mix well and adjust salt.
● Use a stone grinder (sil batta) for authentic texture.
● Flowers should be fresh and tender.
Serve with plain rice and dal for a nutritious tribal meal.
Sanai flowers are also used in Jharkhand’s natural medicine and farming culture for their nitrogen-fixing ability.
