A fiery curry Origin: Maharashtra

Introduction
A fiery curry made from thick gram flour noodles (shev) dunked in spicy red gravy—rarely known outside Khandesh region.

Ingredients

  • 2 cups thick sev (fried gram flour sticks)
  • 2 onions, finely chopped
  • 2 tbsp goda masala
  • Red chili powder
  • Garlic & ginger 

Instructions

  • Make spicy onion-tomato masala.
  • Add sev just before serving.
  • Simmer briefly to absorb flavors.

Pro Tips

  • Use thick, hard sev (not the snack type).
  • Don’t cook sev for long—it gets soggy.

Serving Suggestions
Best with bhakri or jowar roti.
