Origin: Maharashtra
Introduction
A fiery curry made from thick gram flour noodles (shev) dunked in spicy red gravy—rarely known outside Khandesh region.
Ingredients
- 2 cups thick sev (fried gram flour sticks)
- 2 onions, finely chopped
- 2 tbsp goda masala
- Red chili powder
- Garlic & ginger
Instructions
- Make spicy onion-tomato masala.
- Add sev just before serving.
- Simmer briefly to absorb flavors.
Pro Tips
- Use thick, hard sev (not the snack type).
- Don’t cook sev for long—it gets soggy.
Serving Suggestions
Best with bhakri or jowar roti.
