Introduction

A traditional speciality from Rajasthan, Kachri Ka Achaar is made from the
small wild melon known as kachri, prized for its tangy flavour and firm
texture. Prepared with a blend of aromatic spices, this achaar offers a
refreshing balance of sour, spicy, and earthy notes that beautifully
complement a wide range of Indian dishes.

Historical Relevance

Native to the arid regions of Rajasthan, kachri has been an important
ingredient in desert cuisine for centuries. Its ability to flourish in harsh
climatic conditions made it a valuable seasonal produce, and pickling became
a popular method of preserving its distinctive flavour so it could be enjoyed
throughout the year.

Preparing the Main Ingredients

Ingredients:

  • 250 g fresh kachri, washed and sliced into thin rounds
  • 2 tbsp mustard seeds (coarsely ground)
  • 1 tsp fennel seeds
  • ½ tsp fenugreek seeds
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1½ tsp salt (or to taste)
  • 2 tbsp lemon juice or vinegar
  • ¼ cup mustard oil

Instructions:

  1. Wash the kachri thoroughly and slice it into thin, even rounds. Remove the seeds if they are mature and hard.
  2. Sprinkle the slices lightly with salt and set them aside for about 30 minutes. Pat them completely dry to remove excess moisture.
  3. Lightly roast the fennel and fenugreek seeds, then coarsely grind them.
  4. Mix the kachri slices with the mustard seeds, roasted spices, turmeric powder, red chilli powder, and salt.
  5. Heat the mustard oil until it reaches the smoking point, then allow it to cool completely. Stir in the lemon juice or vinegar.
  6. Pour the prepared oil mixture over the kachri and mix gently until every slice is evenly coated with the spices.
  7. Transfer the achaar to a clean, dry glass jar and allow it to mature for 3–4 days, stirring gently once each day before serving.

Choose firm, young kachri for the best texture and flavour. Drying the
slices thoroughly before pickling helps the spices adhere evenly and
improves the shelf life of the achaar. Always use a clean, dry spoon when
serving to preserve its freshness.

Serving Suggestions

Enjoy Kachri Ka Achaar with bajra roti, ker-sangri, stuffed parathas, or a
traditional Rajasthani thali. It also pairs wonderfully with grilled
vegetables, simple lentil dishes, steamed rice, and wholesome home-cooked
meals.

Kachri is often called the “desert melon” and has been used in Rajasthani
cuisine for generations—not only in pickles but also as a natural meat
