Molgai Podi

Molgai Podi

Dry Ground Chutney Origin: Andhra Pradesh

Introduction

Originating from Andhra Pradesh, Molgai Podi, also known as Dry Ground Chutney, is a flavourful and aromatic dry chutney made with roasted urad dal, desiccated coconut, dried red chillies, curry leaves, and asafoetida. The ingredients are lightly fried before being coarsely ground, creating a savoury, spicy, and nutty accompaniment that pairs well with a variety of traditional South Indian dishes.

Historical Relevance

Molgai Podi reflects the traditional Andhra culinary practice of preparing dry spice and lentil-based accompaniments that can be stored and enjoyed as required. The combination of roasted lentils, coconut, chillies, curry leaves, and asafoetida gives this preparation its distinctive regional character and rich, aromatic flavour.

Preparing the Main Ingredients

Ingredients:

  • 4 tablespoons vegetable oil
  • 100 g / 3½ oz (½ cup) split and skinned urad dal, rinsed and drained
  • 100 g / 3½ oz (½ cup) desiccated (dried flaked) coconut
  • 8–10 dried red chillies
  • ½ teaspoon asafoetida
  • A few curry leaves
  • Salt, to taste

Instructions:

  1. Heat a little vegetable oil in a frying pan over medium heat.
  2. Add the urad dal and stir-fry for about 1–2 minutes, or until golden. Remove from the pan and set aside.
  3. Add the desiccated coconut to the pan and stir-fry for about 30 seconds, or until golden brown. Remove from the pan and set aside with the roasted dal.
  4. Add the dried red chillies to the pan and stir-fry for about 1–2 minutes, or until they turn a shade darker.
  5. Add the roasted chillies to the coconut and urad dal.
  6. Season the mixture with salt and add the asafoetida and curry leaves.
  7. Transfer the mixture to a blender and process until coarsely ground. Avoid blending it into a fine powder.
  8. Transfer the Molgai Podi to a clean, dry jar and use as required.

Pro Tips

Roast the urad dal, coconut, and dried red chillies separately to ensure that each ingredient develops its full flavour without burning. Keep the heat at medium and stir continuously while roasting. Allow the roasted ingredients to cool slightly before grinding, and process them only until coarsely ground to retain the traditional texture. Store the finished podi in a clean, completely dry airtight jar to help maintain its flavour and freshness.

Serving Suggestions

Serve Molgai Podi as a dry accompaniment with traditional South Indian meals, rice, idli, dosa, or other savoury dishes. It can also be mixed with a little oil or ghee to create a flavourful side that complements simple everyday meals.

Fun Fact

Molgai Podi is a convenient dry preparation that can be stored and used as required, making it especially useful as a quick accompaniment for everyday meals. Its combination of roasted lentils, coconut, chillies, and aromatic curry leaves gives it a distinctive texture and depth of flavour.
