Introduction
Pakhala Bhata is a fermented rice dish served cold with curd, water, and spices—perfect for Odisha’s hot summers.
Ingredients:
1 cup cooked rice
2 cups water
1/2 cup curd
1 green chili
1/2 teaspoon mustard seeds
1 dried red chili
Curry leaves
Salt
Instructions:
Soak cooked rice in water overnight.
Next day, add curd, salt, and chopped green chili.
Temper mustard seeds, curry leaves, red chili in oil and add to the rice.
Pro Tips:
Let rice ferment longer in summer for a more tangy flavor.
Serving Suggestions:
Pair with fried vegetables, badi chura, or mashed potatoes.
