Introduction
Chamthong, also known as Kangshoi, is a comforting vegetable stew from Manipur. Made with seasonal vegetables and flavored with aromatic herbs, it’s a staple in Manipuri cuisine.
- Ingredients:
- 2 cups bottle gourd, cut into chunks
- 1 cup potatoes, cubed
- 1 cup French beans, chopped
- 1 handful fresh kidney beans
- 1/2 cup green peas
- 2 cups amaranth greens
- 3-4 green onions, chopped
- 5-6 jackfruit seeds
- 1-inch piece of ginger
- 3-4 garlic cloves
- 1/2 inch fresh turmeric
- Fresh Bhut Jolokia (optional)
- Salt to taste
- Instructions:
- In a pot, combine all vegetables, ginger, garlic, turmeric, and salt.
- Add water to cover the ingredients and bring to a boil.
- Simmer until vegetables are tender.
- Adjust seasoning and serve hot.
