Introduction

Chamthong, also known as Kangshoi, is a comforting vegetable stew from Manipur. Made with seasonal vegetables and flavored with aromatic herbs, it’s a staple in Manipuri cuisine.

  1. Ingredients:
  • 2 cups bottle gourd, cut into chunks
  • 1 cup potatoes, cubed
  • 1 cup French beans, chopped
  • 1 handful fresh kidney beans
  • 1/2 cup green peas
  • 2 cups amaranth greens
  • 3-4 green onions, chopped
  • 5-6 jackfruit seeds
  • 1-inch piece of ginger
  • 3-4 garlic cloves
  • 1/2 inch fresh turmeric
  • Fresh Bhut Jolokia (optional)
  • Salt to taste
  1. Instructions:
  1. In a pot, combine all vegetables, ginger, garlic, turmeric, and salt.
  2. Add water to cover the ingredients and bring to a boil.
  3. Simmer until vegetables are tender.
  4. Adjust seasoning and serve hot.
