Preparing the Main Ingredients

Ingredients:

  • 1 tsp red chilli powder
  • 1 tsp black salt
  • 1 tsp salt (or to taste)
  • ¼ cup mustard oil
  • 1 tbsp lemon juice or vinegar

Instructions:

  1. Wash, peel, and cut the carrots into thin, even sticks.
  2. Dry the carrot sticks thoroughly using a clean kitchen towel to remove any moisture.
  3. Combine the carrots with the mustard seeds, fennel seeds, fenugreek seeds, turmeric powder, red chilli powder, black salt, and salt.
  4. Heat the mustard oil until it reaches the smoking point, then allow it to cool completely.
  5. Pour the cooled mustard oil over the carrot mixture, add the lemon juice or vinegar, and mix well until evenly coated.
  6. Transfer the achaar to a clean, dry glass jar and allow it to rest for 2–3 days, stirring gently once each day before serving.

excess moisture can reduce the shelf life of the pickle. Store the achaar in
