Originating from Andhra Pradesh, Illigada Chutney is a bold garlic chutney prepared with sesame oil, red chilli powder, fenugreek, and fresh lime juice. The addition of a fragrant tempering of dried red chillies, curry leaves, and mustard seeds gives this chutney a rich, spicy, and aromatic character.

Preparing the Main Ingredients

Ingredients:

  • 125 ml / 4½ fl oz (½ cup) sesame oil
  • 3 tablespoons red chilli powder
  • 1 tablespoon ground fenugreek
  • Juice of 20 limes
  • 100 g / 3½ oz garlic, cut into vertical slices
  • Salt, to taste

For the tempering:

  • 1 tablespoon vegetable oil
  • 2 dried red chillies
  • 4 curry leaves
  • 1 tablespoon mustard seeds

Instructions:

  1. Heat the sesame oil in a frying pan over low heat. Add the red chilli powder and ground fenugreek and fry for about 30 seconds.
  2. Season with salt, add the lime juice, and cook for 5 minutes.
  3. Add the sliced garlic and cook gently for 15 minutes.
  4. For the tempering, heat the vegetable oil in a separate frying pan.
  5. Add the dried red chillies, curry leaves, and mustard seeds. Stir-fry for 1–2 minutes, or until dark brown.
  6. Pour the prepared tempering over the garlic mixture and combine well.

Cook the sesame oil mixture gently over low heat to prevent the chilli powder and fenugreek from burning. Allow the garlic to cook slowly so it absorbs the flavours of the spices and lime juice. Prepare the tempering separately and pour it over the chutney for maximum aroma.
